Best Cooking Light so farOct 12, 2008
By F. Mendez I'm not a person that you will find very often in the kitchen, but when I am, I really enjoy it. I have several books from the Cooking Light series, and this is, for me, the best so far. The recipes are easy to follow and the pictures make you want to cook every single recipe in the book. Great choice for a person not so used to being in the kitchen as well as for the more advanced cook. And the best thing of all is that all recipes are healthy ones so you don't have to chose between taste and health.

Great Recipes, Gorgeous PhotosJan 11, 2009
By MaggieApril I've been a fan of Cooking Light for years, and Everyday Favorites is a great collection of recipes with gorgeous photographs on almost every other page. The only thing it doesn't have that I would have liked to see is a chapter devoted entirely to pasta recipes. They include nutritional facts for all of their recipes.
There are easily two dozen recipes I will eventually try including some really tasty looking ones in the Soups, Salads, and Poultry chapters.

Get "The Best of Cooking Light" book insteadMar 04, 2010
By C. Lance I realize different foods appeal to different people, but after searching through this book, I only found 2 recipies that sounded appealing. I have several Cooking Light books, and in my opinion, "The Best of Cooking Light" is the best by leaps and bounds. Looks like Amazon is either no longer selling it, or they are out of stock. I highly recommend that book if you can get your hands on one. Absolutely superb recipes, you won't be dissapointed.

By Helochick77 Every recipe I have made from this book has turned out wonderfully. It's my "go to" cookbook when I have a smattering of stuff in my pantry and don't quite know what to make. This cookbook has always come through for me! It has a wonderful assortment of recipes from all parts of the world.
My absolute favorite recipe is the Rosemary and Pepper-crusted Pork Tenderloin. The fennel seeds add an amazing amount of flavor and I cook this frequently. The Baked Chiles Rellenos are also good.
I also like that the ingredients for the recipes are easily located in a normal grocery store. There are tons of photos to help get you motivated about the recipes. Out of 500 recipes there will definitely be more than a few that will tempt your palate. I highly recommend!

So helpful when watching caloriesMar 06, 2011
By B. Hamburg There are a few reasons I bought this book. One, while I'm generally pretty active (don't own a car, live in a hilly neighborhood, etc), I love food so much that I have a hard time with portion control. Two, I have a difficult time estimating how many calories I'm consuming in a serving and this can sneak up on a person. Three, I recently stumbled upon the Cooking Light website and appreciated their quick, basic recipes with provided nutritional information.
As wedding season approaches and invitations start rolling in, I decided it was time to reevaluate my portion sizes and make healthier food choices. I knew I needed help. I also didn't want to pay for a subscription to the magazine and receive some recipes along with a ton of ads and articles. This book seemed to fit the bill.
For the past few weeks my meal plans have been from this book. I usually choose three things to make: something like the flaxseed-honey sweet potato bread or fruit salad to accompany non-fat Greek yogurt in the morning and two main courses that can be divided up and taken to my 12-hour work shifts.
Favorites so far have been the slow cooker meatloaf; the cashew-curry chicken salad; and the fruit salad with cayenne, mint, lemon, and honey. Most of the casseroles are pretty basic but at the same time tasty and it's nice to be able to eat that kind of comfort food on a cold, rainy day while keeping the calories around 300 per serving (leaving room for a big side salad). I've only encountered a couple of ho-hum recipes but none of them were so bad that I couldn't tweak them with more spices (if all else fails, use Tapatio!). But seriously, make the meatloaf. It was amazing!
End result? I've lost about ten pounds without feeling like I have been missing out on anything. I actually do MORE cooking now, incorporate a lot more protein, and eat more frequently due to the fact that I have delicious leftovers waiting in my fridge. I've become used to the idea that my plate doesn't need to be loaded with food and that a realistic serving size, like the ones suggested in this book, will nourish me and keep me going.
My ONLY quibble is that this is a large, paperback book. The pages will not stay open nor will it fit in my cookbook holder. I'm going to find someone who can turn this into a spiral-bound book and then it will be perfect.
